"Governo all' uso Toscano" dates back to the most ancient traditions of Tuscan winemaking. In this process, a small portion of the harvested grapes are left to partiallly dry. They are added to the wine during fermentation to give softness and enhance the wine's bouquet.

Fresh rose of raspberries and clove spice. The mouthfeel is medium intensity, a wash of tartness into a balanced length of spice and moderate tannin. The flavour profile is spontaneuous; a jolt of sour cherry, a blip of strawberry, rose tea, white peppercorns, enters dryness of leather and tar menthol heat finish.
